Northwest Pecan Treats
Ingredients:
3 c flour
1/2 c sugar
1/2 t salt
1 c cold butter
4 slightly beaten eggs
1 1/4 c corn syrup
1 1/4 c sugar
3 T butter, melted
2 t vanilla
2 c chopped pecans
1/2 c dried cranberries or cherries
Directions:
1. Preheat oven to 350 degrees F. Line a 15"x10"x1" baking pan with foil, extending the foil over edges of pan. Grease the foil, set pan aside.
2. In a large bowl, combine flour, 1/2 c sugar, and salt. Using a pastry blender, cut in the 1 c cold butter until mixture resembles coarse crumbs. Press mixture evenly into prepared pan. Bake for 20 minutes.
3. In a large bowl, whisk eggs, corn syrup, 1 1/4 c sugar, 3 T melted butter, and vanilla until combined.
4. Sprinkle pecans and cranberries/cherries over hot crust. Slowly pour egg mixture over all Bake for 30 minutes OR until set (ours took 45 minutes). Cool completely on wire rack. Left baked mixture from pan using the foil. Remove foil. Cut into bars.
To store:
Layer bars between waxed paper in an airtight container. Cover. Store at room temperature for up to 3 days or freeze for up to 3 months.

Ohhhh - I found cranberries for the first time here in Germany and put them in the freezer - would you please, please share this delicious looking recipe, my cranberry loving DH would be really suprised and happy ,-) Wish you a gorgoeus weekend!
